They are plunged into boiling water with brown sugar in it for 3 minutes for medium sized a bit less or longer for other sizes. Then covered in ice to stop the cooking and rock salt is added to increase the cooling process and to add flavour. So they die very quickly, get over the guilt trip and enjoy eating them....
