How do you cook uneven fish?

Asked: Richard Beland, Last Updated:

My method is essentially this:

  1. Pat down fillet with paper towel.
  2. Salt and pepper both sides.
  3. Heat pan with olive oil to a medium-high.
  4. Place fillet skin side down - should hear a reasonable sizzle, but not too hot.
  5. Apply light pressure with fingers to keep the contact with the pan.
